Mint Chocolate Chip Coconut Milk Ice Cream

 

Yield: ~ 6 cups (1 1/2 quarts) ice cream

Prep Time: 10 minutes

Total Time: ~ 45 mins

Equipment Required: Ice Cream Maker

 

Ingredients:

– 2- 14 oz cans regular (full fat) coconut milk (use canned only)
– 1/2  cup raw agave nectar
– 1 tbsp arrowroot  or cornstarch
– 1 tsp peppermint extract
– 1/4 tsp salt
– 3/4 cup chopped dark chocolate

Directions:

  1. Add coconut milk, agave nectar, arrowroot or cornstarch, peppermint extract and salt to blender or food processor.  Mix well.
  2. Add mixture to ice cream maker and process following manufacturer’s instructions.
  3. When mixture starts to thicken, add chocolate chips.
  4. Continue to process using ice cream maker until further thickened.  Place in freezer to harden to desired consistency.
