Chewy Coconut Chocolate Chip Granola Bars

Yield: 8 bars

Prep Time: 15 minutes

Cook Temp: 325 degrees Fahrenheit

Cook Time: 20-25 minutes (until set and slightly browned)

 

 

Ingredients:

  • 1 cup quick oats
  • 1 cup shredded unsweetened coconut
  • ½ cup pumpkin seeds
  • ½ cup chopped walnuts
  • ½ cup whole flax seeds
  • ½ cup chopped dark chocolate
  • 1 teaspoon vanilla extract
  • 5 tablespoon real maple syrup
  • 2 eggs, beaten

Directions:

1.     Preheat oven to 325 degrees Fahrenheit. Mix all dry ingredients in large bowl.

2.     Add vanilla, maple syrup, and eggs to dry mixture. Combine well.

3.     Line 8 inch by 8 inch pan with foil to prevent sticking. Spoon mixture into pan. Press down by laying another empty 8 inch by 8 inch pan on top of the mixture and pushing down.

4.     Place pan in oven & bake for 20-25 minutes, or until set and slightly browned. Remove from oven.

5.     Allow pan to cool for 20 minutes on a cooling rack, then remove foil with granola to cool for 30 minutes more. When cool, cut into 8 equal sized bars. Store extras in refrigerator to keep longer.
