Pineapple & Blueberry Breakfast Quinoa

PINEAPPLE & BLUEBERRY BREAKFAST QUINOA

Cook Time: 30 minutes
Serves: 3-4

 

INGREDIENTS

  • 1 cup quinoa
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tablespoon vanilla extract
  • 1 can full fat coconut milk
  • 1 cup water (plus a little extra if needed while cooking)
  • 1 cup frozen pineapple
  • 1 cup frozen blueberries
  • 2 fresh bananas, peeled, and cut into ½-inch pieces
  • Hemp seeds for garnish

 

DIRECTIONS

  1. Place the quinoa in a fine mesh strainer and rinse under cold running water, drain.
  2. In a saucepan over medium-high heat combine coconut milk, water, vanilla, cinnamon and nutmeg until all of the coconut milk is melted into the liquid.
  3. Add quinoa and pineapple. Cook for approximately 30 minutes, adding water if necessary.
  4. Take quinoa off heat, add frozen blueberries and chopped banana. Stir to combine.
  5. Sprinkle with hemp seeds and serve with additional coconut milk.
