Paleo Banana Pancakes

Paleo Banana Pancakes

Yield: ~20 three inch pancakes

Enough to feed 4 hungry people or 6 not-so-hungry people

Cook Time: 20 mins

 

 

INGREDIENTS

• 6 tbsp coconut oil, melted

• 5 eggs, whisked

• 6 bananas, mashed

• 1 ½ cups almond flour

• ½ tsp cinnamon

• ½ tsp nutmeg

• 1 tsp vanilla

DIRECTIONS

1. Pre-heat griddle or pan on medium heat.

2. In a large mixing bowl, combine all wet ingredients. In another bowl, combine all dry

ingredients. Combine the two until well incorporated.

3. Pour batter into a large, pourable measuring cup for easy transfer to griddle or pan.

4. Pour batter onto griddle in approximately 3 inch circles.

5. Cook each pancake until edges become solid, then flip and cook a few minutes more.

6. Serve with warmed maple syrup and fruit. Extra pancakes freeze well.
